Study of tilapia oil microcapsule by spray drying technology

  • The wall materials and spray drying parameters of tilapia oil microcapsulation were studied in this paper. The wall materials were selected and optimized by using microcapsule efficiency, and spray drying parameters were screened by using microcapsule efficiency, moisture and yield. The results showed that the optimum wall materials were gelatin, sucrose as well as xanthan, and the parameters were as follows: 4.5% gelatin, 13.2% sucrose, 0.3% xanthan gum and 7.0% fish oil. The inlet and outlet temperatures for spray drying were 115℃ and 75℃, respectively. The spray pressure after 15 days was 100 kPa. The anti-oxidative ability of microcapsule was significantly improved .
