Abstract:
By taking chitosan as flocculant to recover soluble proteins from surimi washings, we conducted a single factor test on pH, temperature, additive amount of chitosan flocculant and their orthogonal test to investigate the effects of these 3 single factors on protein recovery rate, light transmittance and COD removal rate. The results show that the optimum technological conditions for 40 mL surimi washings (9.0 mg · mL
-1protein) are: pH 8.0, 35 ℃ and 1.5 mL addition amount of 1% chitosan flocculant. Under these conditions, the protein recovery rate reaches 73.17%, light transmittance 87.50% and COD removal rate 47.20%.
